A typical meal in Ramadan would be:
Date and milk/ buttermilk to break the fast.
 Soup, salads , and then different traditional dishes
and finally sweet and green tea with mint..

 SOUP " chorba" it's made of vegetables and lamb and ( crushed wheat or crushed thin vermicelli pasta)):

1KG of Lamb meat ( the Neck or shoulder)
Vegetables:
onion, garlic, tomatoes, carrots
courgettes, potato, celery, coriander .and chick peas.
Spices:
black pepper, paprika, salt
hot chili pepper optional.

*cook meat + spices+ veg  except chick peas.
**blend the veg then add the chick peas to the veg and meat , bring it to boil
*** add the crushed wheat or the crushed vermicelli ( of your choice)
Boil it for about 10 minutes then decorate with coriander

Enjoy!!!!!!!





Garlic Bread

Mix butter and garlic powder and parsley
spread on French bread
put in the oven for 5 minutes
Enjoy


Stuffed tomatoes:

Cut the tomatoes
Take off the seeds 
then spread some salt on them and leave them




for the stuffing :
mix avocado, pickles of your choice , soft cheese and  lemon or vinegar.
finally: decorate with olives black / green

A simple way to make couscous:

1/  mix dry couscous (1kg) with ( 1 tbls) of vegetable oil .

2/ poor hot water on the couscous then cover it .
3/ leave it for about 10 to 15 minutes.
4/ rob the couscous with your hands or a wooden spoon
5/ put some butter and Enjoy    OR in order to get a softer couscous




5/steam it  using a traditional steamer as in the picture below










 7/ then move it from the steamer , put butter and Enjoy!!.

M'bardja


Ingredients for the dough



3 cups of semolina

1 cup of vegetable oil or melted butter

salt

water

Ingredients for the filling

paste of dates

butter

1tsp of cinnamon

* Mix the ingredients for the dough and devide it into 2 small balls, then flatten them in a round ( circle) shape.

** mix the ingredients of the filling then flatten it in the same size and shape as the dough

then put the ( dates past) on the top on the first circle of the dough and cover the dates with the second circle of the dough.

*** now that we have a big circle of 3 layers ( dough, dates, dough), cut it into small shapes then cook it on a dry pan or traditonal Tajine ...

  it has to be cooked in a pan, not in the oven
